MUSHROOM PRODUCTS
MUSHROOMS: Fresh organic winecaps (Stropharia rugosa-annulata), are an excellent choice for grilling, stuffing, and soups. We have them available briefly in late Spring and often in Autumn. They are organically cultivated on the farm. We are also in the process of inoculating and cultivating a range of other gourmet mushrooms.
We are blessed with an excellent array of wild gourmet mushrooms as well. When the weather and the woods are willing, we bring the following fresh mushrooms to market: chanterelles, yellowfoot chanterelles, black trumpets, lobster mushrooms, hedgehog mushrooms, maitake (hen-of-the-woods), sulphur shelf (chicken-of-the-woods), and fall oyster mushrooms. Black trumpets, maitake, and oyster mushrooms are also available in dried form throughout the year, sun-dried and packaged in food-safe, compostable cellophane, while supplies last.

BEEF & BEES!
BEEF: Our Scottish Highland Cattle are 100% grass-fed, organic, and drug-free: no antibiotics or growth hormones, ever. The cattle are groomed regularly to maintain their gentle dispositions and sociability. We take great care to make sure they don't lose touch with their Scottish origins--we speak Gaelic to them while grooming and even play the bagpipes for them, on occasion!
In keeping with our farm's comprehensive conservation plan, we use a rotational-grazing system that improves soil fertility while preventing overgrazing and erosion. Better soil means healthier forage plants--and healthier cows.
We currently have a limited supply of lean ground beef and stew meat available, $9.99/lb., in packages weighing approx 1 lb each.
Other cuts are available in limited supply; check for availability.
BEE PRODUCTS: Pure, raw honey is available in small seasonal batches. While we can not guarantee our honey as organic due to the foraging range of honeybees, the vast majority of our bees' nourishment comes from our organic orchard, gardens, and pollinator habitats.
